The soil

Bouchots_C.jpg The Soil !

Special to this part of the world : The Soil.

In spite of the original meaning of the word "soil" here the sea is just as much part of the "soil" as is the land. The Bay of the Mont Saint Michel is a vast area which is covered and uncovered by the sea during the tides, the biggest in Europe. It is not just bare land during low tide, no ...

It is place busing with activity of amphibian engines and mussel farmers, who grow the jewel of all mussels ... la Moule de Bouchot. This mussel just received the AOC label, a reward for all the hard work these mussel farmers, farmers of the sea have put into it .
Oysters are other products of this fertile soil. Local producers will let you taste
these delicious oysters and our restaurants will suggest seafood platters which include all the shellfish and seafood from the bay ( from Cancale to Granville.)

Another speciality of the bay is the Salicornia, a small vegetable which grows in sand and sea areas, used as a spice in many recipees, but can also be eaten on its own as a vegetable.

moutons_A.jpgSheep :

These are special sheep which graze on the herbus, which is totally uncovered during the big tides. The plants they eat are used to the salt of the sea. These sheeps are therefore called "pré salé" (pre-salted) and their meat is extravagant, not to be compared with any other lambs meat. Only a few butchers and restaurants offer this rare kind of lamb meat.
